Organic Eggs Salmonella Outbreak

Organic eggs tainted with an antibiotic-resistant strain of Salmonella are the source of a seven-state outbreak. The organic egg Salmonella outbreak includes 79 illnesses among patients who prepared eggs at home and ate them at restaurants. At least 21 people have been hospitalized.

Between February 24, 2025, to May 17, 2025, 71 illnesses were reported among residents ages 1 to 90 in the following states: Arizona (3), California (63), Kentucky (1), Nebraska (2), New Jersey (2), Nevada (4), and Washington (4). Patients in Kentucky, New Jersey, and Washington reported traveling to California and Nevada before they got sick.

Health officials used whole genome sequencing to identify the genetic fingerprint of the Salmonella cultured from each patient. The fingerprints matched, indicating patients got sick from the same contaminated food.

Ninety percent of patients interviewed said they ate eggs in the week before they became ill. They reported purchasing eggs sold under various brand names at stores including: Walmart, Save Mart, FoodMaxx, Lucky, Smart & Final, Safeway, Raleys, Food 4 Less, and Ralphs. Two clusters of illness were also associated with food from two restaurants.

Tracing the eggs from the point of purchase back to the farm where they were produced, investigators from the U.S. Food and Drug Administration (FDA) determined that August Egg Company of Hilmar, CA, was the source of the eggs. They collected samples from the company’s processing facility, and tests revealed the eggs were contaminated with the same strain of Salmonella Enteritidis that caused the illnesses.

August Egg Company has issued a recall for 1,700,000 dozen brown cage-free and brown certified organic eggs.

Antibiotic Resistance

The Salmonella Enteritidis strain causing this outbreak is resistant to antibiotic treatment.

Most Salmonella infections do not require medical treatment, but antibiotics are prescribed to treat severe cases. Illnesses in this outbreak may not respond to commonly prescribed antibiotics.
