Carniceria Guanajuato Salmonella Outbreak [Updated]

Updated September 22 with new case total. A Salmonella outbreak linked to Carniceria Guanajuato taqueria in Chicago now includes at least 56 people, according to city health officials and news reports. Seventeen people have been hospitalized.

Carniceria Guanajuato, located at 3140 N California in Chicago, is voluntarily closed on September 8, 2023, and is cooperating with the Chicago Department of Public Health’s investigation. Health officials have not yet determined the food source of the outbreak and are warning customers who have purchased any prepared food from the taqueria or the prepared food section of the grocery store since August 29, 2023, not to eat it.

The restaurant was inspected on September 8 and September 14 and received a “pass with conditions” each time. Among the violations were:

  • Raw beef and eggs stored above ready-to-eat food such as sliced lettuce
  • Coolers with missing thermometers
  • Cold foods stored above 41˚F, sliced tomatoes with an internal temperature of 48˚F
  • Mineral deposits and soil buildup in the ice machine

Symptoms of a Salmonella Infection

Symptoms of a Salmonella infection, called salmonellosis, include nausea, fever, vomiting, abdominal cramps, and diarrhea that can be bloody. Usually, these symptoms develop within six to 72 hours of exposure.
