Diacetyl and Bronchiolitis Obliterans
Bronchiolitis obliterans, a serious disease of the lungs that can be caused by diacetyl and butter flavoring, was dubbed “popcorn packers lung” in 2000 when workers at a popcorn plant in Missouri fell ill. Scientists at the National Institute of Occupational Safety and Health (NIOSH) made the connection. NIOSH scientists are now reporting cases of bronchiolitis obliterans among workers in other plants that use diacetyl and butter flavoring, which can include plants where pastries, frozen foods or candies are made. There are also cases among workers in plants that make flavorings.
Bronchiolitis obliterans is the irreversible blocking of the small airways (bronchioles) by granulation tissue and inflammation. The symptoms are cough, dyspnea, and fever.
