Steak Contaminated with E. coli Sold to
Carino's Italian Restaurant

Carino’s Italian Restaurant received beef potentially contaminated with E. coli O157:H7 from Oklahoma-based supplier National Steak and Poultry, according to a media statement the company issued about its E. coli steak recall of 248,000 pounds of beef. The statement, issued Dec. 28, 2009 specifies:

“The recall is limited to beef products sold primarily to the
Moe’s, Carino’s Italian Grill, and KRM restaurants in Colorado, Iowa, Kansas, Michigan, South Dakota and Washington. These are the states where the USDA has determined there have been illnesses that could be linked to contaminated beef.”

Although meat E. coli contamination is more often associated with ground beef, this Carino’s recall involves mechanically tenderized, or “non-intact” cuts of beef, according to the USDA’s Dec. 24 announcement.

E. coli and Non-Intact Steak Served at Restaurants

E. coli can enter into the interior of a piece of mechanically tenderized, non-intact steak when the steak is punctured with blades and/or injected with tenderizing brine to improve the flavor. To kill any E. coli that may be in the interior of the steak, it must be cooked to an internal temperature of 160° F. This means non-intact steak should never be served rare or medium -rare.

The risk of E. coli contamination associated with non-intact steak products has been known for several years.

Any restaurant that disregards this risk is arguably negligent.
